<p>Not only are sweet potatoes readily available, inexpensive, and delicious, they have many other benefits for your health. Here, we’re pairing this super food with Bird Nests in an easy-to-cook sweet soup recipe. <p></a></em><strong>Japanese Sweet Potato and Bird Nests Soup (Serves 4)</p>
<p></strong><strong>What you&#8217;ll need:</strong></p>

<li>Three medium size Japanese sweet potatoes, washed, peeled and cut into small cubes.</li>
<li>Bird nests (10gm dried), soaked for 2 hours, softened and loosened into strands.</li>
<li>An electrical double boiler with 1 litre of water for the inner pot.</li>
<li>A small stalk of fresh pandan leaves, washed and tied into a knot.</li>
<li>Two table spoons of rock sugar for taste.</li>
</ol>
<p><strong>How To Make Your Sweet Soup:</p>
<p></strong><strong>Step 1: Cook the pandan leaves in boiling water for 3 minutes or until the fragrant aroma of pandan comes out.<br />

<p>Coconut water seems to be the new fad these days. You probably have seen different brands, canned or bottled, and read so much about it already. And yes, we are going to talk more about it, and introduce you to our refreshing concoction! <em>Super</em><em> </em>easy, <em>super</em> nutritious.</p>
<p><strong>FRESH COCONUT DRINK WITH BIRD NESTS</p>
<p></strong><strong>What </strong><strong>You&#8217;ll Need:</strong></p>
<p>1. A piece of dried bird nests (8gm) soaked and loosened.<br />
2. Two fresh and young Thai coconuts.<br />
3. An electrical double boiler with 300ml of water for the inner pot.<br />
4. Four glasses.</p>
<p><strong>How </strong><strong>To Make Your Drink:</p>
<p></strong><strong>Step 1: Double boil the bird nests</strong> for about 40 minutes using mid to high heat until the strands are soft, and turn translucent.<br />
<strong><br />
Step 2: Chill both the coconuts and the cooked bird nests</strong><strong>, separately,</strong> in the fridge for about an hour.<br />
<strong><br />
Step 3: Cut open coconut to pour out the fresh water into the </strong><strong>glasses, then scrap out the white creamy flesh</strong> of the young coconuts.<br />

										<content:encoded><![CDATA[<p><span style="font-size: 18px;"><strong>In a span of a few days, coincidentally, I have been asked this question three times (1) by a Facebook Fan; (2) by a Chinese restaurant owner we are partnering with; and (3) by a Finance and HR Head of a local IT company whom would like to engage us for our health talk.</strong></span></p>

<p>It’s a very good question, and I’m pretty sure there have been debates about whether or not <strong><em>edible bird nest</em></strong> is suitable for vegetarians. So, is a nest an animal by-product?</p>
<p><strong><br />
What Are Edible Bird Nests?</strong></p>

<p>Firstly, let us take a look at what edible bird nests are made of. Edible bird nests are made from the salivary excretions of swallows. The gummy saliva, hardens into tightly woven strands. The saliva is like the cement that holds the entire nest together, and the strands are interwoven throughout the nest. Such salivary excretions is super rich in nutrients, almost 100% proteins and essential amino acids. The birds make their nests for the sole purpose of laying eggs in, and they abandon the nest after the chicks have hatched. After which, the nests are harvested as a health tonic.</p>
<p><strong>Reasons For Being A Vegetarian</strong></p>
<p>Next, we consider the common definition of a vegetarian: a person who does not eat or does not believe in eating meat, fish, fowl, or, in some cases, any food derived from animals, such as eggs, milk, or cheese, but subsists on vegetables, fruits, nuts, grain, etc. In addition, the choice of being a vegetarian may also be influenced by either moral, religious, and/or health reasons.</p>
<p>An interesting comparison is this: Can one compare the saliva of the swallows, or swiftlets, to say milk or cheese, which are also derived from within an animal? Or, should one view the nest as a natural object, which contains a high concentration of amino acids?</p>
<p>Depending on how you interpret the definition of vegetarian, and what your reasons behind being a vegetarian are, bird nests (which is technically saliva and not a product derived from the animal itself) may, or may not be considered vegetarian. So as you can see, it really is up to an individual to consider the above factors, and form an opinion based on his/her own beliefs.</p>

Good to sip some Pu&#8217;er after a few bites of the sweet lotus paste and salted egg yolk.</p>
<p><strong>2. Oolong Tea (Chinese Black Tea)</strong></p>
<p>The most famous oolongs are Iron Buddha (铁观音, tiěguānyīn) and Big Red Robe (大红袍, dà hóng páo). These rich teas, woody and thick with roasted aromas, would blend well with the sweet and salty moon cakes. Oolong tea is also known to increase fat metabolism.</p>
<p><strong>3. Warm Pandan Double Boiled Bird Nests Soup</strong></p>

<p>There are truffles, pink champagne, salted caramel, even coconut and kaya. These are the mooncake flavors that one can find from hotels and patisseries. So much creativity, fusion and reinvention have taken the contemporary mooncakes to new heights. Now, let&#8217;s try the ‘Caviar of the East’ &#8212; Bird Nests!</p>
<p>In a collaboration with Caffe Pralet by Creative Culinaire (a well-established cafe and baking school in the Tiong Bahru enclave), King of Nests worked with Chef Timothy Chia to create new refreshing bird nests specialty treats for mooncake fans.</p>
<p>Previously, we shared the first story about Chef Sherie and bird nest egg tarts. We now present the second story in our collaboration series with Tim!</p>
<p><strong>Bird nest moon cakes sound very exotic, especially to the expat community here. What flavors are available?</strong></p>
<p>There are two types of mooncakes which are embedded with premium bird nests: the snow skin and the jelly. Both types are typically served chilled, and these are popular with mooncake fans with a sweet tooth.</p>
<p>For the snow skin mooncakes, there are four flavors:</p>
<ol>
<li>Jade Matcha with Yuzu Custard</li>
<li>Ruby Blood Orange with Chocolate Lotus Paste</li>
<li>Gui Hua with Wolfberry Custard</li>
<li>Pearl Almond with Gingko Lotus Paste</li>

<p>For the jelly mooncakes, there are also four flavors:</p>

Who created these flavors? Tell us about the creative chef behind these Mooncakes.</strong></p>
<p>The idea struck when Timothy Chia from Caffe Pralet attended one of the King of Nests talks on bird nests. As the business moved away from the traditional way of marketing bird nests, the avenue to work with chefs opened new opportunities.</p>
<p>Tim, a multi-talented and dynamic lad in his early twenties, who is both the operation manager and chef of Caffe Pralet, was as open to the collaboration as the King of Nests. Not only does Caffe Pralet offer customized cakes for all occasions, it also specializes in unique local fusion dishes on its seasonal menus such as the Har-Cheong Kai Burger (Prawn Paste Chicken Chop Burger), the Baked Laksa Pasta, and the Tofu Club Sandwich, to name a few. Therefore, experimenting with bird nest in mooncakes is an interesting project that Tim looked forward to embark on.</p>
<p>We had fun doing taste tests with Tim before we nailed the ones we liked.</p>

<p>So, which was the King of Nests favorite?</strong></p>
<p>It has got to be the Matcha Jelly! I’m a green tea fan! And I must say, the taste of green tea goes very well with bird nests. I also liked the Ruby Blood Orange Snow Skin Mooncake a lot because of its special Chocolate Lotus Paste. It is not just normal chocolate; there are orange peels with orange liqueur inside. The pairing of the citrus with chocolate is perfect!<br />

What other plans do you have lined up?</strong></p>
<p>The general perception of bird nests is that it is a tonic health food, and it is normally, rather strongly, associated with Traditional Chinese Medicine (TCM). King of Nests are breaking away from that mold. One of our differentiating factors is defining bird nests as gourmet, a super ingredient which you can enjoy in various dishes, both sweet and savory, thus our introduction of new ways to enjoy bird nests to the consumers. Naturally, it is part of our strategy to find chefs who are equally experimental, to create new dishes, and broaden the use of bird nests beyond TCM.</p>

<p>We don’t know what’s inside and that adds to the suspense <em>before</em> the show. Every contestant gets the same ingredients, yet each resulting dish is absolutely unique. That accumulates the suspense <em>throughout</em> the entire show, until you finally see the complete dish presented to the judges.</p>
<p>At the press event of MasterChef Asia last week, I was extremely impressed by how quick-thinking and skillful the three Singapore contestants were during the 30-minute live cook-off. I am equally intrigued by their stories; how each of them made sacrifices and strive to pursue their dreams in MasterChef Asia. To conceptualize their dish immediately after opening their boxes, to entertain the judges and audience at the same time, and to whip out three different gourmet dishes, filling the room with aroma that makes you hungry. They were so focused in channeling their passion and creativity to create those sumptuous delicacies.</p>
<p>There’s Leong, a lawyer who part-times as a bartender; he came up with Butter-Poached Prawns, Pickled Daikons with Lime-Coconut Cream. Lennard, an engineer with a dream to own a sandwich shop, made amazing Prawn Tacos (Coconut flatbread, sautéed prawns and pineapples, with shrimp mayonnaise and pickled vegetables). And Sandrian, a Thai-Chinese home maker with such unique knowledge on spices from her background, whipped up something very close to her heart: Coconut Ginger Prawns with Prawn Omelette served on Pineapple Salsa and Pickled Daikons.</p>

<p>Getting fired up as I watched them in action, the first dish that comes to mind when I saw the ingredients was Steamed Prawns in Chinese Rice Wine. I would use the prawns, Chinese parsley and the old ginger. It’s a very simple and easy dish that could be done within 30minutes with minimal fuss. Something that a schedule-packed working mum like myself can comfortably manage in my “Getting The Dinner Ready” by 7pm challenge!</p>
<p><strong>How To Prepare Steamed Prawns in Chinese Rice Wine</strong></p>

<p>Place the prawns whole (without removing the shells) in a large plate, pour a large cup of Chinese rice wine to just cover the prawns nicely, and then sprinkle some sliced ginger strips and wolfberries (or goji berries) into the dish. Add a dash of sugar, dash of light soya sauce, and some pepper.</p>

<p>Now, to add a twist, the additional ingredient that is not in the mystery box which I would like to use is <em>bird nests</em>. I would place about 8gm of soaked and loosen raw bird nests into the wine and prawn mixture, and steam the dish for about 5 to 8 minutes. Some finely chopped Chinese parsley would be used for garnishing on the steamed prawns when done.</p>

<p>Besides double boiling, steaming is an alternative way for cooking bird nests and this method allows the nests to absorb the sweetness of the wine and goji, as well as the saltiness of the prawns, which would blend well with its natural eggy taste when cooked. The steamed bird nests would be removed from the wine broth and served separately from the steamed prawns.</p>
<p>I can’t wait to try it out and show you guys! This will be such an exquisite dish.</p>

<p>Just this month, King of Nests started a new product range &#8211; Bird Nests Specialty Products. Today we dive into how the specialty products came about, and who the chefs are behind the unique delicacy. A treat often found in Hong Kong, King of Nests now offers the delicious treat to the food lovers of Singapore!</p>
<p><strong>Where Do The Bird Nests Used In The Tarts Come From?</strong></p>

<p>The white whole bird nests (Bai Yan Zhan) come from various parts of Indonesia which is the world&#8217;s largest exporter and producer of bird nests. These nests are house nests obtained from accredited suppliers in Indonesia, whose methods of harvesting do not endanger the livelihood of swiftlets nor interfere with their way of life. As part of King of Nests’ field trips to villages in the Indonesia islands, we visit the houses where the birds make their nests, and meet the locals who harvest and clean the bird nests.</p>
<p><strong>How Did The Idea Of Making Bird Nests Egg Tarts Come About?</strong></p>

<p>Out in the market, it’s either rock sugar bird nests or ginseng bird nests. Bottled and ready to eat. Even if the bird nests were home-cooked, it’s still likely to be the same flavors. So, to create new flavors and ways to eat bird nests, we began to experiment on tastes that will pair well with bird nests.</p>
<p>Since bird nests have this natural rich eggy taste (because it’s super rich in proteins), it isn’t hard to figure out that bird nests will go well with eggs. First, the artisans tried it in Chinese steamed eggs, the savory kind. It was delicious yet simple. Then, a friend mentioned it reminded her of bird nests egg tarts which she had tried in Hong Kong. And when we asked around, we found more people who have heard about the bird nests egg tarts in Hong Kong, but no one knows where to get them in Singapore.</p>
<p>That’s when the ‘Ah-ha’ moment struck. We’ll make the bird nests egg tarts! After all, Kings of Nests is a bird nests specialty store in Singapore. Anything and everything bird nests!<br />

About The Chef Who Bakes The Egg Tarts</strong></p>

<p>The chef is a super cool, super talented, mother of two, Ms Sherie Quek, the co-owner of Madame Patisserie. Before starting out on her own, she was with the Ritz-Carlton Hotel for over 10 years, working her way up from a junior cook in the pastries department to its No. 2 chef with 18 staff working under her. While working for Ritz-Carlton, work trips to Japan, Germany and Dubai had exposed her to new techniques and kitchen cultures. Sherie is very passionate about baking; everything from the scones and jams, to even the sliced white bread and cinnamon rolls, are made from scratch at her café, fresh and piping hot.</p>
<p>Very interestingly, Ying Yih from Kings of Nests and Ms. Sherie met for the first time at a networking session in a friend’s cafe and were seated next to each other. And as they said, the law of attraction is at work. Hard to believe the person Ying Yih was looking for to help her on the egg tarts came at the right moment at the right place. The two ladies hit it off immediately.<br />

</strong>Yes, of course! As the Mid-Autumn festival is coming up in September, the idea to collaborate with a moon cake chef has been brewing. King of Nests will have fun experimenting with more exotic flavors and doing taste tests to create bird nest snow skin moon cakes, and bird nest jelly moon cakes. We’ll tell you more about it when the products are launched!</p>
